Week 1: Beef Barley Stew

This weeks soup is one of my favorites - Beef Barley Stew. A variation of the recipe found in J. Kenji López-Alt’s Food Lab (aka the Bible), this stew will stick to your ribs and make your heart happy. In just a few days my downstairs neighbor will be treated to the intoxicating smell of roasted beef mixing with vegetables garlic, onions, and olive oil.
This stew features barley plumped to perfect doneness, each grain bursting with meaty essence. Vegetables offering texture and nutrients, and beef that falls apart if you look at it wrong. Chewing optional.
