Week 39: Tomato Soup!
Hello everyone! I hope your fingers and hearts are staying warm. This week I’m making tomato soup with a twist!
I’ve been feeling sentimental and grateful for everything and everyone in my life. My partner, who is my most devoted non-paying customer, has been begging for tomato soup and grilled cheese ( I sold out last time I made it and he only got a taste-test tablespoon worth). And what better way to show my love for someone than to feed them what they’ve been craving.
All that being said, I’m always looking for ways to sneak in healthy bits and pieces into my soups. So this week’s tomato soup, in addition to having the traditional butter, olive oil, onions, garlic, veggie broth, tomatoes, cream, and spices, will also include beans! White Beans are loaded with protein and fiber and thanks to my trusty vitamin you’ll barely be able to tell they’re included!
