Week 48: Lemony Veggie Miso Soup
This week’s soup is lemony, miso-ey, and full of veggies. I imagine that delicious miso soup you get as an appetizer at your favorite sushi restaurant. Now make it a *little* less salty and add in a bunch of vegetables. I’m talking Potatoes, White beans, Celery, Carrots, Garlic, Onions, maybe sweet potato? maybe butternut squash? and frankly whatever else looks delicious at the Union Square Farmers market. Then add in a squeeze of lemon to brighten the whole thing up!
This soup is full of vitamins AND Probiotics.
Ingredients: Potatoes, White beans, Celery, Carrots, Garlic, Onions, Miso, Olive Oil, Spices, + potentially more veggies depending on what looks good at the farmers market
