Week 51: Coconut Curry Sweet Potato Soup
It's creamy, it's spicy, it contains a deceiving amount of veggies
This week’s soup will warm your heart and soul. Yes because it is meant to be eaten hot, but also because it carries a little kick! It’s spicy enough that your tongue will say “wow that was interesting”! But not so spicy that you’ll need a glass of milk. If your toddler screams at the sight of black pepper, don’t share with them! But still buy some soup for yourself.
The secret to the rich rich rich flavors in this soup are the roasted veggies. The carrots and sweet potatoes basically get caramelized in the oven before being blended in. yum!
